A long Sunday lunch in the countryside. Spring flavours, proper roasts and everyone round one table.
Think asparagus with wild garlic to start. White crab mousse with white balsamic and lavosh cracker. Beef tartare with a sourdough crisp for those who like it bold.
For the main event, rump of beef with horseradish sauce or corn fed chicken breast with bread sauce, served with Yorkshire pudding, roast potatoes, glazed carrots and gravy. There is also spring risotto with peas, broad beans and mint and pan seared chalk stream trout with celeriac rösti and watercress velouté.
To finish, almond and hazelnut torte with caramelised apple or popcorn panna cotta with sweetcorn ice cream.
