A produce-led summer dinner with Amber Francis, set in the market garden when the farm is at its fullest.
By mid-August, the garden is doing the talking. The beds are full, herbs are everywhere and the season has reached that generous point where the ingredients do not need much interference. This dinner is built around that moment.
Amber Francis is known for thoughtful, ingredient-led cooking with a close connection to the land. Her food has a softness and clarity to it, allowing vegetables, herbs and seasonal produce to sit at the centre of the plate. It is elegant without feeling precious, detailed without feeling overworked.
For Roots, Amber’s menu will be shaped around what is at its peak in the garden. Expect bright, fresh plates, proper textures, herbs used with purpose and dishes that feel completely in step with August. Vegetables will take a leading role, with the menu built around flavour, balance and the natural rhythm of the season.
This will be one of the softer evenings in the Roots calendar. Less about smoke and weight, more about freshness, detail and the height of the garden. The food will feel light but generous, with each course bringing something different from the farm into focus.
The dinner will be served across long tables in the market garden, surrounded by the produce that has helped shape the menu. It is open-air, relaxed and quietly special, with the evening moving gently from late summer light into dusk.
Humble Grape will pair wines throughout, choosing bottles that bring freshness, lift and balance to the menu. Expect small producers, low-intervention styles and wines with provenance, introduced in a relaxed way as each course is served.
A late-summer Roots dinner at its most seasonal. Garden-led, lighter, slower and completely tied to the land.
