A modern Italian Roots dinner with Francesco Mattana of Our Cooking Journey, served in the middle of the market garden at the height of summer.
Francesco’s cooking is generous, instinctive and full of flavour. His style is rooted in Italian food culture, but never feels too traditional or too polished. It is about good ingredients, handmade elements, fire, texture and the kind of food that feels both considered and relaxed.
For this dinner, Francesco will bring that approach to Tewinbury, working with the farm and the garden to create a menu shaped by the season. Expect handmade pasta or bread elements, summer vegetables, herbs, fire-led cooking and dishes that feel full without being heavy. The menu will lean into Italian warmth and simplicity, but with the market garden very much at the centre.
This is the kind of evening where the food should feel close to the land. Produce picked from the garden, ingredients cooked simply, plates that build in depth as the courses move on and a few moments that feel properly special without making the night feel too formal.
The setting does a lot of the work. Long tables between the beds, the farm around you and the evening slowly moving from daylight into dusk. The menu will follow that same pace, starting fresh and seasonal before moving into richer, more generous flavours.
Humble Grape will pair wines throughout the evening, with a focus on small producers, low-intervention styles and bottles that work with Francesco’s food. The wines will be introduced as they are poured, creating a relaxed tasting experience that adds to the evening without turning it into a lecture.
It is a full Roots experience: guest chef, garden setting, handmade food, fire, wine and the kind of summer evening that feels properly worth staying late for.
